I was in a festive mood this morning. So I decided to bake some cookies. They’re chocolate-chocolate chip cookies and peanute butter cookies. They actually turned out very good, despite me just testing out the recipe for the first time. I guess I just had a very good and reliable source. I actually got the recipes from allrecipes.comI took pictures of my baked cookies… eheh…

Chocolate-chocolate Chip Cookies

INGREDIENTS

 

    1 cup butter, softened
    1 1/2 cups white sugar (1/2 granulated, 1/ 2brown)
    2 eggs
    2 teaspoons vanilla extract
    2 cups all-purpose flour
    2/3 cup cocoa powder
    3/4 teaspoon baking soda
    1/4 teaspoon salt
    2 cups semisweet chocolate chips - used Nestle’s dark chocolate and chopped them up
    1/2 cup chopped nuts (optional) peanuts

1. Preheat oven to 350 degrees F (175 degrees C).

2. In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

Look out, remember to just drop spoonfuls because the cookies will still expand and rise. I actually dropped more a teaspoon and the cookies turned out to be gigantic… weeehhh…

Yummy Peanut Butter Cookies

INGREDIENTS

 

    1 cup margarine
    1 cup peanut butter
    1 cup white sugar
    1 cup brown sugar
    2 eggs
    1 teaspoon vanilla extract
    1/2 teaspoon almond extract
    2 1/2 cups all-purpose flour
    1 1/2 teaspoons baking soda
    1/2 teaspoon salt

1. Preheat the oven to 375 degrees F (190 degrees C). Grease two cookie sheets.

2. In a large bowl, cream together the margarine, peanut butter, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and almond extracts. Combine the flour, baking soda and salt; stir into the peanut butter mixture. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Use a wet fork dipped in sugar to make the crisscrosses on the top.

3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

The batter can be quite sloppy and it was somewhat difficult to roll, so I put them in the refrigerator to harden for a bit. These turned out really perfect. I addeds some toasted peanuts and they’re actually yummy, yummy, yummy. They the right size because I learned from my mistake the first time. ehehehe…

I’ll be looking for more recipes to try out… I’m really excited coz I’m planning to cook for the holidays.
